- In a saucepan add 4tablespoons of ghee and sauté all whole spices till aroma releases. Add diced ginger and remaining onion and sauté till they soften
- Add rice to the pan and sauté for 3 to 5 minutes in low flame
- Add water to and salt according to taste. On tasting the water it should be a bit salty. Keep covered on low flame. Stir occasionally
- Once water evaporates completely, turn off the stove and keep covered for 20 minutes
- After 20 minutes stir the rice with a flat spatula adding drizzle of ghee in between
- Garnish with fried onions cashews and raisins and coriander leaves
